Beef Zucchini Ribbons with Carrot Veloute

2. 2Use plain cooked beef, carrot, and zucchini that have cooled completely.

1. 1Cut the cooked carrot and cooked zucchini into short thin strips.
2. 2Keep the strips short enough that they do not act like long noodles.

1. 1Finely chop the plain cooked boneless lean beef and remove any fatty pieces.
2. 2Do not use beef cooked with salt, oil, onion, garlic, or seasoning.

Stir the plain pumpkin puree with a spoon until smooth, then toss it lightly with the short vegetable strips.

1. 1Place the vegetable strips in the bowl and add the chopped beef on top.
2. 2Serve a small, loose portion that is easy to chew.
