Steak & Sweet Potato Frites

2. 2Trim all visible fat from the beef and cut the vegetables into even batons.

Steam the sweet potato and green beans separately until tender enough to crush with a fork.

1. 1Sear the beef in a dry nonstick pan, then cook to at least 145 degrees F (62.8 degrees C) with a 3-minute rest.
2. 2Do not add butter, oil, salt, or seasoning.

1. 1After the 3-minute rest, slice the beef thinly across the grain and arrange it with the soft vegetable batons.
2. 2Cool completely, then cut the selected serving into dog-size bites.
